Luxurious Grilled Cheese Sandwich with Black Truffles
Grilled Cheese Ingredients:
2 slices bread, one pumpernickel & one rye
3 cheeses, Italian Mozzarella, Smoked Mozzarella, Smoked Gouda
1 oz fresh black truffles
Mushrooms Ingredients:
Mushroom Mixture - Oysters, Shiitakes, Pioppinos, Chestnuts, King Trumpet, and Lion’s Mane.
2 tbs. butter
1 clove garlic, peeled and thinly sliced
Fresh shallots, peeled
Hennessy Cognac
Mushroom Demi-glace (save all stems and extra mushroom pieces and cook down. Add roasted tomato and red wine)
1 tsp. white truffle oil
Directions:
Lay out cheese on bread and top with black truffles.
In a separate pan, add mushroom medley to garlic, shallots, and butter in the pan.
Flambé with Hennessy Cognac. Add in Mushroom Demi-glaze and white truffle oil. Salt and Pepper to taste.
Cut grilled cheese and pour mushroom mixture on top. Serve immediately.
