Stelly's Royal Crawfish Etouffée
Ingredients
2 lbs. crawfish tails
2 cans cream of mushroom
1 can golden cream of mushroom
1 can cream of shrimp
1 can Rotel tomatoes
16 oz. box chicken broth
Cajun seasoning
1 stick of butter
1 container of mixed creole onion blend (like Guidry’s fresh cuts)
-OR-1 onion diced*
1 green bell pepper diced*
2 cloves of minced garlic*
1 cup of celery diced*
Instructions:
Cook 2 cups of rice. Put aside.
Melt butter over medium heat.
Sauté bell pepper, onion and celery until translucent (about 20 minutes).
Add garlic.
Add cream of mushroom, cream of shrimp, and rotel tomatoes to sauteed vegetables, mix well.
Add chicken broth and desired amount of cajun seasoning, then simmer for about 15-20 minutes.
Add crawfish tails and cook for another 5-10 minutes.
Serve over cooked rice and enjoy!
