Field to Feast: Charred Flat Iron Steak with Green Peppercorns & Madeira Pan Sauce

“Beef! It’s what’s for dinner!” And may I recommend Louisiana beef, because we certainly have some of the best. Take a visit to Galen Iverstine’s Butcher Shop on Perkins Road and your taste buds will thank you. Top off your week with a visit to Beausoleil, one of my favorite restaurants in town using fresh, local, Louisiana ingredients. Ask for a frozen Mississippi Mule while you’re there -- they’re super yummy!


Who is Galen Iverstine?

Galen Iverstine is a first generation cattle, pork and poultry farmer in Tangipahoa Parish. He is also the owner of Iverstine Farms Butcher, a full-service butcher shop and smokehouse, in Baton Rouge.

Charred Flat Iron Steak with Green Peppercorns & Madeira Pan Sauce

  • Four 6-8 oz. Flat Iron Steak

  • Kosher Salt

  • Black Pepper

  • 3-4 tbsp. Extra virgin olive oil

  • ¼ cup dijon mustard

  • ½ cup brined green peppercorns

  • ½ cup sliced shallot confit

  • 1 ½ cups Madeira

  • 2 cups chicken stock

  • 2 tbsp. buttermilk creme fraiche

  • 2 tsp. balsamic vinegar

  • 1 tbsp. Chopper parsley

  1. Season steak generously with salt and pepper.

  2. Heat a cast iron skillet over high heat until very hot. 

  3. Add olive oil and sear steak to medium rare. When all steaks are cooked, turn heat to medium, and add a little more oil to the pan.

  4. Add mustard, peppercorns, and shallots and cook until fragrant and beginning to brown.

  5. Add Madeira and stock and bring to boil, scraping up any brown bits on the bottom of the pan with a wooden spoon.

  6. Cook until liquid coats the back of a spoon. 

  7. Whisk in creme fraiche, vinegar and parsley.

  8. Transfer steaks to a plate and pour sauce over the top.
